Three different jobs are mixed into one ranking. A sheet carries food in and out of the oven. A baking steel or a stone is thermal mass: it is preheated for its own sake and then gives that heat back to a pizza base or a loaf. Buying by the category name alone will get you the wrong one.
Two entries here sell trays and racks together, at £22.49 and £19.79. The rack is what lets air reach the underside — for cooling biscuits, draining, or roasting above the fat rather than in it. Check the rack sits down inside the tray rather than perching on the rim.
The cheapest set here is carbon steel with a non-stick coating; the Estmoon is uncoated stainless. Coating means nothing sticks until the coating goes, and a metal spatula shortens that clock. Bare stainless needs paper or oil but has nothing to wear off.
The 16 inch steel is 40.6 cm square and needs clearance on every side to get in and out with gloves on; the 14 inch is 35.6 × 30.5 cm. Peels have the same problem in the cupboard, which is why both Chef Pomodoro peels here fold their handles down.
Both steels are a quarter of an inch thick and the cordierite stone is 1.2 cm. The more mass a plate has, the longer the oven needs before it is genuinely up to temperature throughout — plan on a long preheat rather than the ten minutes a bare tray needs.
