What the scale actually reads
Four different questions are answered by four different instruments here. A hydrometer reads density and lets you work out alcohol from the drop between two readings; an alcohol meter reads strength directly but only in a finished spirit; a refractometer reads sugar as Brix; a pH meter reads acidity. None of them substitutes for another.
Range comes before accuracy
The honey refractometer here starts at 58% Brix and the Apera pH tester spans 0 to 14, while the two food pH meters are built around the 3 to 7 band that ferments live in. A tenth of a point of accuracy is worthless if your sample falls outside the scale.
Glass or electronic
Glass hydrometers cost under £20, never need a battery and read for decades — until you knock one against the fermenter. Electronic meters run from £40 to £171 here, need charging and calibrating, and give you a number without arithmetic.
Calibration and drift
Every pH meter on this page drifts and has to be reset against buffer solution; budget for sachets as a running cost. A hydrometer never drifts, but it is calibrated to one reference temperature and reads wrong if your sample is warmer, which is why the kits include a thermometer.
Probe shape decides the sample
A round glass bulb needs liquid, so cheese, dough and jam have to be diluted before you can read them. The spear probe at rank 7 goes straight into a solid. Check the probe against what you actually ferment before you compare prices.
How much you have to pour off
A hydrometer needs a full trial jar — around 100 ml of your beer, which most brewers then tip away rather than pour back. A refractometer needs two drops on a prism. Over a batch that difference is real, and it is the main reason brewers own both.
