What matters when buying
Cheese forks or meat forks
Kuhn Rikon sells the two separately here, and the difference is real: cheese forks are for dunking and lifting a bread cube out of a hot pot, meat forks sit in oil at temperature for minutes at a time. The all-steel meat set has no handle material to soften.
How many forks in the set
This list runs from four to eighteen. Six is the standard because most pots have six notches in the rim; four leaves someone waiting, and twelve or eighteen only makes sense for a chocolate fountain or two pots on the table.
Handle material and heat
Synthetic, cherry wood and bare steel all appear. A wooden or synthetic handle stays cool but cannot be left resting on a hot rim; a plain steel fork can, and then it needs a napkin to pick up.
Colour coding
The GuDoQi set gives each of its twelve forks one of six handle colours. With six people round one pot that is the difference between everyone finding their own fork and a polite guessing game — the cheapest set here is the only one that solves it.
Length in the pot
The forks here are 24 to 27 cm. Shorter than that and your knuckles sit over the burner; much longer and the fork tips out of a small pot when you rest it. Check the fork length against the pot you already own, not the other way round.
