What matters when buying
Grams of pâté, not litres
Terrines are labelled by what they hold, and the range here is 250 g to 1 litre. A 250 g mould yields a handful of slices for two; the 1 litre version is a dinner party dish. Get this wrong and the terrine either fills half the mould or overflows it.
Straight sides for slicing
The point of a terrine is that you chill it, turn it out and cut even slices. Straight, near-vertical walls give slices of the same width top to bottom. The 0.25 litre Le Creuset that leads this ranking is a round pot, which serves by the spoon rather than the slice.
The lid, and the water bath
A terrine goes into the oven inside a tin of hot water, and the lid keeps the top from drying while the middle comes up to temperature. Both Cosy & Trendy entries and the Le Creuset pots include lids; a mould without one needs foil and loses the point of buying a proper terrine.
Porcelain, stoneware or earthenware
Porcelain is dense and white, wipes clean and shows nothing; stoneware holds heat longer and comes out of the oven still cooking gently; earthenware is the traditional choice for potted portions. All three appear in this small list, at £9.19 to £21.15.
One mould or a set of pots
The Le Parfait entry is six small pots for £21.15 rather than one terrine. That is a different way of serving the same mixture — sealed individual portions instead of a loaf you slice — and it changes both the cooking time and how long each portion keeps once opened.
Check it is a terrine at all
This node is loosely policed. Two of the seven products that cleared our filter are Le Creuset rice pots at around £178, and the top seller is a 0.25 litre round casserole. If you want a rectangular lidded mould for pâté, only three listings here qualify.
