How the spice comes out
Three exits appear in this list: a grinder cap, a shaker insert with holes, and an open pour. Shaker holes suit dried herbs and ground paprika, a grinder is for whole crystal and seed, and an open neck is only useful when you are measuring into a spoon.
Refill from the top or the base
Most mills unscrew at the bottom, which means turning a full container upside down over the worktop. Rank 5 is sold specifically on filling from the top, and the jar set at rank 7 ships with a funnel. Small details, but they decide whether refilling is tidy or a spillage.
One tin or twenty-four jars
A masala dabba keeps nine spices in a single lidded tin you carry to the hob one-handed. Separate jars label better, stack better and can be replaced one at a time. The tin wins for the six or seven spices you reach for daily; jars win for a full rack.
Air, light and how fast it fades
Ground spice loses its aroma to air and daylight, so how well the lid seals matters more than what the jar is made of. Bamboo lids look better than plastic but depend on a separate liner for the seal — worth a look on a 24-pack you intend to refill for years.
Where it has to fit
Square jars stand flush in a drawer and on a rack; round mills and tins do not. Measure the drawer depth and the shelf height before ordering a 24-piece set, because 120 ml jars only save space if they stand upright where you meant to put them.
Pre-filled or refillable
Rank 1 is sold for its contents: 390 g of pink salt in a body that is not really built to be reopened. Convenient once, expensive to repeat. A refillable mill plus a bag of crystals costs more on day one and less by the third refill.
