What matters when buying

Six criteria

Ceramic, because it is salt

Salt is corrosive and draws moisture, and a steel burr sitting in it rusts and then seizes. Every mill here that names its mechanism names ceramic. That is not marketing — it is the reason a salt mill and a pepper mill are usually built differently inside.

Rock crystals, not table salt

A mill is made for coarse crystals. Rock salt and Himalayan chunks feed through the burr; fine sea salt packs in the chamber and comes out in lumps. Before you decide a mill is faulty, check what you filled it with.

Refillable, or filled once

One entry here arrives with 390 g of pink salt already in it and is bought as much for the salt as for the grinder. Everything else is an empty mill you keep topping up, which is a different purchase and a different running cost.

Damp salt and the ring it leaves

Why is a salt mill built differently from a pepper mill?

Salt corrodes metal, so salt mills use a ceramic grinding mechanism while pepper mills traditionally use hardened steel. It matters when you buy a two-in-one set: one mechanism has to serve both jars, and it will be the ceramic one because that is the half that has no choice.
