Roller width sets the sheet width
Most machines here roll a 150 to 180 mm sheet, and that number decides how wide your lasagne sheets and ravioli rows can be. A 150 mm roller is the Italian standard and every accessory is built around it; wider is only an advantage if you make lasagne in quantity.
Thickness settings, and how many
Nine settings sounds like marketing until you make ravioli, where you want a sheet thin enough to see your hand through. Three or four steps force you to choose between too thick for filled pasta and too thin for tagliatelle.
Clamp machine or mixer attachment
