What matters when buying
End grain or edge grain
The £74 block at rank 10 is end grain: the wood fibres stand upright, so the blade parts them rather than cutting across them. Every other wooden board here is an edge-grain plank — lighter, far cheaper, and the reason the price range on this page spans seven times over.
What the surface does to your edge
Glass and stone never scratch, which is precisely the problem: something has to give, and it is the blade. Wood, bamboo and plastic all yield slightly under the knife. If you own carbon steel or a Japanese blade, the glass board at rank 6 is a worktop saver, not a cutting surface.
Size against your sink
A 60 x 40 cm board will not fit a standard sink or a dishwasher basket, and a 25 cm board slides about under a chef knife. Decide where the board is going to be washed before you decide how large it should be — that constraint eliminates more boards than any other.
