What matters when buying
Mallet or needles
A mallet flattens: it breaks fibres by force and spreads the meat thinner, which is how an escalope becomes a schnitzel. A needle tool cuts fibres in place and leaves the thickness alone, which is what you want on a steak. Only one of the ten here is a needle model, and it is also the most expensive.
Two faces, two jobs
Most mallets here have a spiked face and a flat one. Spikes are for tough cuts that need the fibres broken; the flat side is for even thickness without shredding the surface. The Vomaliy at £7.49 is the listing that names both, and that is the specification to look for.
Aluminium alloy or 304 stainless
The cheap heads are aluminium alloy, which is lighter in the hand and softer over time. Three entries here specify 304 stainless steel and cost £19.99 to £24.70. Same shape, roughly triple the price, and a noticeably heavier swing.
One piece or a fitted head
The joint between head and handle is what works loose after a few hundred whacks. Two listings here advertise a one-piece body specifically, which removes that failure point — and explains why a plain lump of metal costs £24.70 when a similar-looking one costs £9.34.
Weight does the work
A heavier head needs a shorter swing to do the same job, which matters if you are flattening six escalopes rather than one. Material is the best proxy on a listing page: solid stainless and aluminium alloy of the same size are very different objects in the hand.
Cleaning the spikes
Spiked faces and needle beds hold raw meat between the points, and that is the one hygiene question this category actually raises. The Aihomo is the entry that states dishwasher safe outright; on anything else, budget for a brush and hot water straight after use.
