Some presses have one permanently fitted disc, others come with fine, medium and coarse plates. A fixed disc cannot be lost and cannot be fitted the wrong way round, which is why the leader here advertises it as a feature. Interchangeable plates only earn their place if you actually want coarse mash as well as fine — gnocchi dough needs the finest one.

18/8 and 18-8 are the grades quoted here, and the steel itself is rarely what fails. The pivot and the seam where the perforated basket meets the body take the entire load of every squeeze — a press that flexes visibly under a hot potato will keep doing it until it splays.
