What matters when buying

Plate head or wire loop

A masher head is either a perforated plate that pushes potato through round holes, or a bent wire ribbon that cuts through the pile. The plate gives the smoother, more uniform result and is what both true mashers here use; the wire is lighter, faster and leaves the lumpier texture some people actually want in a champ or a colcannon.

Head width against your pan

A masher is used inside the saucepan the potatoes were boiled in. A head wider than about two thirds of the pan base jams against the sides and you end up mashing in circles, while a very small head simply takes longer. Match it to the pan you own, not to the picture.

Steel head or nylon head

Stainless steel plates cut cleanly and last, but they will mark a coated pan. If you mash in a non-stick or ceramic pan, a nylon or heat-resistant plastic head is the safer choice — that is exactly why the five-blade mince tools in this list are nylon rather than steel.
