Mesh fineness decides the job

Fine mesh holds back icing sugar, cocoa and tea leaves and gives you a smooth sauce; medium mesh drains rice and quinoa without clogging. The two are not interchangeable — a fine mesh full of wet quinoa takes a minute to drain and a brush to clean.

Diameter against your bowl

A sieve is only useful if it rests on something. 7 to 8 cm sits over a cup or a single portion, 12 to 14 cm over a mixing bowl, 18 to 20 cm over a pan. That is exactly why three of the top four listings here are sets of three.

Rim, hooks or nothing

A rolled rim with a hook on the opposite side lets the sieve straddle a bowl so both your hands are free. Without one you hold it the whole time, which is fine for dusting sugar and tiresome for straining stock.
