What matters when buying

Six criteria

Etched rasp or pressed holes

The two Microplanes at ranks 1 and 3 use photo-etched teeth that shave a clean curl off parmesan or lemon peel. A pressed box grater tears instead, which is fine for cheddar and wrong for zest — it drags the bitter white pith with it. If you only grate hard cheese and citrus, the rasp is the tool.

Rotary drum or flat blade

Two entries here are drum graters: you load the hopper, turn a crank, and your knuckles never approach the steel. They cost roughly twice a flat grater and only work with the drum they came with. A flat grater is faster to wash and cheaper to replace, at the price of the last inch of cheese always being a gamble.

Blade count you will actually use

The same Brieftons spiralizer sells here as a 5-blade, a 7-blade and a 10-blade at £27.99, £30.99 and £35.99. In practice most people cycle between spaghetti and ribbon; curly fry and crinkle blades come out once. Buy the count you will use, not the count that sounds thorough, and check the caddy stores them safely.
