An instant-read probe is taken to the meat, held there for a second or three and put away. A leave-in wireless probe goes into the joint before it goes in the oven and stays there with the door shut. The price gap between the two formats on this page is roughly ten to one.
Half a second, one second and three seconds are all claimed here. It sounds trivial until you are holding an oven door open with a tray of chicken thighs, checking four of them one after another — that is the moment three seconds each starts to cost you oven temperature.
The listings quote ±0.3 °C and ±1 °C. For a joint coming out at 65 °C either figure is comfortably good enough. For sugar work, tempering chocolate or a low sous-vide target, the tighter tolerance is what you are paying the extra for.

They solve different problems rather than competing.
Because Amazon files it in the same subcategory. The Inrigorous twin-pack measures the inside of a fridge or freezer, not food being cooked, and at £7.49 for two it sells in enough volume to reach eighth place on revenue. It is the one entry here that never goes near an oven.
The Thermapen reads in one second, carries an IP67 rating and comes with a calibration certificate, and it is the only entry here that does. The £8 DOQAUS reads in three seconds with a stated ±1 °C and has 57,888 reviews behind it. For roast dinners the cheap one is enough; for daily professional use, the difference is speed and a documented calibration.
The products are ordered by estimated monthly revenue per ASIN, not by star rating and not by bestseller rank. Only products with at least 200 reviews and an average of 4.3 stars were included. Because revenue is price times units, an £80 wireless probe selling 681 units outranks an £8 probe selling 7,037 — the ordering shows where the money goes, not what most people buy.
