What matters when buying

Six criteria

Sharpening or honing

A honing rod straightens an edge that has rolled over; a sharpener grinds a new one by removing steel. Every product here removes metal, which is why you hone weekly and sharpen a few times a year — not the other way round.

Angle: 15 or 20 degrees

European knives are usually ground around 20 degrees per side, Asian blades closer to 15. The HORL sets both explicitly; a pull-through slot decides for you, and if its angle is steeper than your knife it will grind away the existing bevel before it sharpens anything.

Carbide, ceramic or diamond

Tungsten carbide plates cut fast and coarse, ceramic refines, diamond sits between the two and copes with hardened steel. That is why the three-stage sharpeners here go coarse to fine, and why a single-slot carbide sharpener is a rescue tool rather than a finishing one.

Guided, rolling or freehand

Do I need a whetstone, or is a pull-through enough?

For most kitchens a three-stage pull-through at around £13 restores a usable edge in a minute. A whetstone set gives a finer, longer-lasting edge and lets you set your own angle, but it needs soaking, a flat surface and practice. The two are aimed at different people, not at different budgets.
