What matters when buying
Net diameter against your pot
This category lives on one number. The spiders here run 13, 14, 16 and 20 cm, and the net has to fit inside the pot with room to tilt — a 20 cm net in a 20 cm pan is useless. For a standard 24 cm pasta pot, 14 to 16 cm is the workable range.
Open wire net or fine mesh
An open spider drains fast and lifts dumplings, gnocchi and blanched vegetables. A fine mesh catches crumbs and fat off frying oil but clogs and drains slowly. Only one product here is a genuine fine mesh, and it is sold as an oil strainer for exactly that reason.
Skimmer or sieve
A skimmer goes into the pot and lifts solids out of hot liquid, one scoop at a time. A sieve sits over a bowl or the sink and you pour into it. If you want to drain a whole pan at once, you want a sieve or a colander, not anything on this page.
Forty centimetres from the oil
Total lengths here run from 39 to 45 cm, and that is the distance between your hand and boiling oil. Steel handles take any heat and go in the dishwasher; the wooden handle in this list stays cooler to hold but should be washed by hand.
Slotted spoon or wire spider
Three entries here are slotted spoons rather than wire nets. A slotted bowl holds small or soft items that would fall through a spider, but drains far more slowly — which matters when the food carries on cooking in the oil it is holding.
Where the net joins the handle
On cheap spiders the wire net is crimped into a hollow handle, and that seam traps water and oil. A welded or riveted joint costs a little more and is the part that decides whether the tool still looks clean after a year of deep frying.
