The bone notch
The serrated cut-out near the pivot is what separates poultry shears from any other scissors. It grips a wing or thigh bone so the joint cannot slide out as you close the handles, and it is the first thing to look for in the product photo.
Curved blades
Straight blades cut across a carcass; curved ones follow it, which is what you want when you are taking a spine out or working around a ribcage. Only one pair in this top ten is explicitly listed with curved blades.
Spring return
