What matters when buying
Sticks or moulded handles
Two designs share this category: moulds with a slot for a wooden stick, and moulds whose lid is the handle and the drip guard in one. Wooden sticks give the familiar shape and get thrown away; a moulded handle is nothing to restock but has to be washed after every lolly.
Stacking versus a tray
A connected tray has to travel to the freezer level and stay level, which rules out the door and half the shelves. Individual moulds, and the Lékué set here stacks, fit the gaps a tray cannot use, and you can freeze two and leave the rest in the cupboard.
How many at a time
The sets here run from four moulds to twelve. Four is a household batch; the twelve-piece kit arrives with 100 sticks and 50 bags, which is party arithmetic rather than family arithmetic.
Drip guards and lids
An attached lid does two jobs: it seals the mould in the freezer so the lolly does not taste of last week's fish, and once opened it catches the drips on a hot day. Three listings here are built around that lid.
Getting the lolly out
Silicone peels back off the frozen shape, which is why every mould in this top ten is silicone rather than rigid plastic. Slim, detailed shapes still want a few seconds under the warm tap; a simple tapered mould does not.
What else the mould can do
Several of these are sold for more than lollies: cakesicles, cake pops, frozen yoghurt, fruit purée for a teething baby. If a mould is only in use six weeks a year, that second job is what justifies the cupboard space.
